5/30 Friday Favorites- What I Ate This Week

I haven’t posted a Friday Favorites for the last couple of weeks.  I was in Miami attending the BlogHerFood Conference and have spent a lot of time implementing some changes here- it’s been a very busy couple of weeks.

And today I am heading back up to New York City.  It’s going to be a full week of recipe development and research for upcoming projects.  And some quality time with my blog consultant- my Mom.

This week’s Friday Favorites is all about food.  Not food I have made, but food Chad and I have had while out and about.

We love Ethos Vegan Kitchen in Orlando.  We’ve been visiting them since they were a counter service restaurant in a tiny space near downtown.  They have since expanded into a much larger space and have become a full service establishment.  We certainly don’t get there as much as we should but we do love going there.  Earlier this week we went for breakfast and I got the Tofu Scramble dish.  I was able to get part of the recipe out of them- just tofu, nutritional yeast and black pepper.  And it was good.

I’ve never had wheatberries.  For no other reason than I just have never gone hunting for them.  We have a new Publix near us that offers a hot and cold prepared foods bar, similar to the one you find in Whole Foods.  This is where I had first found this Wheatberry Salad and it is delicious!  Some peppers, apples and wheatberries.  I love about anything that is sweet and salty.

This is what I love about this particular Publix.  They offer complete meals and besides the traditional steamed or grilled veggie sides, they have lots of fun stuff.  Like mashed cauliflower.  If you have never tried mashed cauliflower before, you are missing out.  That’s all I have to say.

My last food from this Publix, I promise.  There is a full sushi bar with all types of fish and veggie rolls.  We picked this up since Chad is not such a big fan of the raw fish.  I am proud of him for becoming more adventurous- even though this is made of veggies he eats anyway.  Carrots, cucumbers, lettuce…but it’s a start.

I’ve talked about this Farmer’s Market a lot.  I’ve talked about how Chad visits here about every weekend after his group run.  And every week he brings home the most amazing ingredients.  This week he brought home fresh blueberries and these juicy tomatoes.

Well, not everything we eat while we are out is always healthy.  On a recent trip to Jacksonville we may have found a cute little ice cream stand.  And I may have indulged in the worst possible flavor EVER.  Vanilla with lots of blue dye.  But it was still delicious and it was fun.  And my mouth and teeth turned blue.  Don’t judge me.

Lots of positive things are happening, I have been chosen as a speaker at this year’s FLBlogCon – a big blogger conference for bloggers from Florida and beyond.  This year the event will be in September at Full Sail University in Orlando.  Should be fun but my knees are already shaking!

With all this amazing food I'm just remembering that I have to eat breakfast!!

I'm jealous of your trip to NYC, I was so close to going againg from June 6 to June 15, but then I changed plans, and my boyfriend is coming to Miami yaaay!!
