I’m getting back on the wagon- the healthy wagon. Well, for now. It’s hard when you travel as food is a huge part of the trip, right? And who wants to dine on carrots and celery sticks when you are in a new town full of new eats? Last week I had a trip to VA Beach where pizza and pumpkin- cinnamon custard shakes were on my agenda. This upcoming weekend I will be at Cedar Point Park in Ohio for a conference and I am positive carrots and celery will not be on the menu.
So with a few days at home I need to redeem my healthy eating habits. At least try to. So here is my What I Ate Wednesday Sunday eats.
A gluten-free English muffin with sunflower seed butter. It was my first time trying sunflower seed butter and though I was skeptical it was very good. Less sticky and not as heavy as peanut or almond butter.
I also made a very simple smoothie incorporating my new found love of flaxseed oil. Besides being high in omega-3 fatty acids and dietary fiber, flaxseed oil is great for fighting water weight and bloat. Here is my recipe for my banana, pineapple and flaxseed smoothie:
Peanut Butter and Jelly Yogurt from Trader Joes. Clearly, this a fan favorite because they are always running low on this stuff every time I go.
Another meal from Trader Joes. I’ve had these Quinoa Veggie Burgers in my freezer and I finally decided to make an easy supper out of them. Simple veggie burgers with arugula and tomatoes on the same gluten-free English muffins from the morning. I love the veggie burgers from Trader Joes. We always have a box or two in the freezer for those days I don’t want to cook.
I made this Quinoa Mac and Cheese, also from Trader Joes, as a side dish. While I felt like this was healthy, it was just not as creamy and tasty as the fake orange-colored stuff in the blue box- you know what I’m talking about. Still, Chad and I both liked it enough to buy it again.
The only thing I actually “cooked” all day was this fruit juice granita which I posted about for Meatless Monday this week. I say “cooked” because there wasn’t much to it other than dissolving sugar in water on the stove. That counts, right?
