Wednesday. The day we all peek into each others lives to see what we eat. This week Chad and I ate super healthy as I have been whipping up some new veggie recipes. Some failed miserably while others were quite delicious. And even though it is just the two of us we end up with a lot of leftovers. After four days of eating Broccoli Quinoa Casserole and marinated vegetables (recipes coming soon!) we were ready for something different. And after spending a few days in the kitchen I was ready for something easy and simple.
Breakfast was scrambled eggs with leftover kale and tomatoes. How can your day go wrong when you start with healthy kale and protein?
We kept lunch light with sushi rolls from one of our favorite local sushi spots.
In the late afternoon as we worked from home we dug into some beet hummus and naan crackers we picked up from Publix. I am needing to make my own beet hummus- it was delicious. The Eat Well Embrace Life company also makes carrot hummus and edamame hummus that is sold at Publix. Must try them all.
Dinner was very easy. We made veggie burgers out of a mix from Fantastic World Foods. The best store bought veggie burgers ever- they are made fresh and not frozen. We used up the last of our veggies as toppers for our burgers including broccoli sprouts and arugula.
