It’s a three-fer kind of day in Beetsland! Today I have a recipe for Blueberry Breakfast Cookies, a COFFEE giveaway and another edition of What I Ate Wednesday.
First, let’s talk cookies and coffee. Cookies. For breakfast. It’s a thing now. Everybody’s doing it. I’m not talking Oreos or Chips Ahoy for breakfast, because your Mother would not approve. What I am saying is I have a recipe for you that is Mom-approved and a healthy way to start your day.
I made these cookies to enjoy with my Gloria Jean’s coffee. Though I rarely make coffee at home (I am more a tea girl) I couldn’t resist using my bean grinder and making a pot of HuehueTenango coffee, their medium-bodied roast with a sweet fruit and winey flavor. I milked that pot all day as I worked at my desk (and milked a plate of cookies as well.) Sometimes all you need is a great cup of coffee and a cookie to go with it.
The cookies are based off of my Oatmeal Chocolate Chip Breakfast Cookies I made last Fall, which were quite popular at my house. Who wouldn’t want cookies first thing in the morning? I made some modifications to the recipe and used fresh blueberries instead of chocolate chips, and a banana instead of peanut butter. I did use a small amount of almond butter to help hold the cookies together but the main base was banana and applesauce.
Breakfast cookies are pretty versatile as well, from adding coconut, pumpkin seeds or granola to using blueberries, chocolate chips or cherries. Anything goes. The important thing is that basic recipe of bananas, nut butter and rolled oats as the base.

WHAT I ATE WEDNESDAY:
Well, you have already seen my breakfast. And I refuse to tell you how many of those cookies I actually had. I will not admit it so don’t even ask.
After breakfast I had to prepare a recipe for my Forks Over Knives cooking class. My assignment this week was the preparation and execution of mushrooms in a no oil sauté. I actually posted about it on Monday and posted the recipe I used the mushrooms in- a Garlic Mushroom Pita Pizza, which was lunch.
As an afternoon pick me up, I made myself a cup of turmeric milk – something I have been experimenting with. I am a big fan of turmeric and I’ve been trying to explore new ways to add it to my diet (instead of just taking pills like I normally do.)
Lucky for me, I didn’t have to cook my own dinner. Mr. Beet brought home some salads from a local restaurant called 903 Mills Market. I love their 903 Market Salad with mango, pineapple, papaya, pecans and blue cheese crumbles.
