Hello friends! It’s time once again for What I Ate Wednesday and I ‘m linking up with Jenn and Laura for the party! My day of eats happened last Sunday when I was able to spend most of the day cooking up some of the recipes I’ve been wanting to whip up. We ate like royalty.
[breakfast] My Mom sent me an easy recipe for protein pancakes and I modified it slightly to make them chocolate-y. They were delicious and a great way to start the day. The special recipe is at the end of this post.
[dinner] We had a late breakfast and an early dinner so there was no lunch. For dinner I made another recipe my Mom sent me. The original recipe was for a walnut-mushroom veggie burger but Mr. Chad is not a mushroom kind of guy so I substituted lentils for the mushrooms.
We really liked these burgers. I made a pear, apple and cucumber salsa as a garnish that went really well with the walnut and lentil flavors of the burgers.
On the side I made turmeric mashed potatoes though as you can see I didn’t mash the potatoes down too much. They were slightly on the sweet side with a honey mustard sauce I added to them.
And my favorite side was this Brussels sprouts au gratin. While it uses heavy cream and cheese, it was super easy to make. I would make this again but only on special occasions.
