I love the cook, but I do not enjoy spending all day in the kitchen slaving over a recipe. I like making very simple things, then throwing my own twist into something, just to make it my own. That’s pretty much my rule with everything. This is why I love to cook with vegetables; not only are they versatile and healthy, it is easy to turn vegetables into a fancy dish, with minimal effort. I am all about minimal effort in the kitchen. Who has the time to spend hours perfecting a pot roast your family is going to eat in 20 minutes? And this is one of those things I love about Publix, they do all the work for me and I just have to throw everything together.
As an Ambassador to the Publix Savannah Women’s Half Marathon and 5k, I have been provided with a Publix gift card so I could share some fun recipes with you. Publix also threw in an extra gift card so that one of you could make a delicious meal as well! Yesterday, I shared my Vegetable Cakes and Parmesan Baked Tomatoes, while today’s recipe is for Curried Chickpeas with Cauliflower Rice.
Just last year I attended a 12-week class to receive my Forks Over Knives plant based certification where we learned new techniques to incorporate new flavors and ideas into our cooking. New ideas to be healthy and eat both Vegan and Vegetarian. One of my favorite techniques we learned could not be any simpler, or healthy. Using a steamer. While there are many ways to steam food, I purchased a steamer from Amazon for less than $25, and it is something Mr. Beet and I use almost nightly.
I grabbed frozen veggies from Publix – diced onions, bell peppers and green peas and steamed them in my steamer. Just throw the veggies into your steamer, turn it on and forget about it.
And the cauliflower rice? Pre-riced at Publix. I tried ricing my own cauliflower once. I over-processed the cauliflower and ended up with a nice think cauliflower smoothie. And while I could try to explain how to do it, or in my case, how not to do it, it’s easier if you read about it from someone who was successful at it – my friend Dana over at Minimalist Baker. Hey- if you do go over to her site can you please make sure you head back here once you master the riced cauliflower? After all, I am trying to share my Curried Chick Peas and Cauliflower Rice recipe. I’m just saying. Anyhow, Publix sells Cauliflower Rice in the produce area as well as in the frozen veggie aisle. Easy.
While my vegetables were steaming, I sautéed the cauliflower rice in a large skillet over medium heat, then added a can of chickpeas.
The veggies took about 15 minutes to defrost in the steamer, and once those were ready, I added them to my cauliflower and chickpeas.
The last thing to throw into the mix were the spices. I used a blend of spices to create the curry flavor – cumin, coriander, cayenne pepper and turmeric.
Simply mix everything together and you are ready to enjoy a delicious, simple and super healthy meal. Who’s with me?
