Hello! Welcome to What I Ate Wednesday where I link up with Jenn from Peas and Crayons for the P-A-R-T-Y! Chad and I had a busy weekend – we went to Disney’s Animal Kingdom for a day, went to church and spent a lot of time working from home. We, of course, did take the time to eat. We had samosas with mango dipping sauce, falafel pitas and pizza at Disney but today I am going to show you what I ate Sunday- Egg Gribiche, Tuna and Walnuts.
[breakfast] I made avocado toast crostinis and topped them with egg gribiche. The mustard, the capers, the tarragon….it was definitely something new for us. Chad wasn’t a big fan but I loved it.
[lunch] We’ve been trying to use up some fresh bread we bought so for lunch I made tuna spinach melts with tomatoes. I baked some frozen chipotle sweet potato fries as a side.
[dinner] We had blue cheese raviolis with a brown butter walnut sauce with tarragon (had to use up that fresh tarragon as well). We’ve become big fans of walnuts on our pasta. Dinner was rounded out with a big green salad.
[dessert] Vanilla ice cream, maple balsamic vinegar and fresh mint leaves. I am in love with this new trend of flavored olive oils and balsamic vinegars.
