Hello Wednesday! I am back for another edition of What I Ate Wednesday, something I don’t post very often. I don’t always take pictures of my food for an entire day but last Wednesday I snapped pics of everything! So yes, I am an entire week behind. But I am sharing my favorite recipe for homemade marinara sauce so do you forgive me? Here it goes-
I experimented with a different way to serve eggs and popped scrambled eggs into avocado shells. While I like eggs boiled or fried, I get bored by plain scrambled eggs. Here I scrambled them with some chopped veggies including the insides of the avocado.
Add a few fresh blueberries, some applesauce and a glass of chocolate almond milk and bam! Here’s breakfast.
Veggie subs. I made those cute cucumber stars with a mini cookie cutter I had ordered off Amazon. This could be the one thing Chad and I make all the time and never tire of.
Add some fresh mint to a cup of green tea and here’s lunch. Too bad I don’t eat like this all the time- so fancy and all.
Fresh pasta and homemade marinara sauce. We love fresh pasta from the local Farmer’s market. Why I don’t make my own marinara sauce more often is beyond me. It’s so simple. I got this super easy recipe from Jess at Dear Healthyness. It’s just my favorite. Here is her recipe-
We had a great dinner pairing the pasta with a chopped salad with all the leftover veggies I’ve been trying to use up. This is a recycled picture of a chopped salad I made a few weeks ago, sorry- it’s so much prettier than the actual salad I made.
