I’m not really a breakfast person. A cup of tea and a slice of last night’s pizza is sufficient. If I even had pizza the night before. Usually I will just grab a small bowl of oatmeal or a hard boiled egg with a slice of avocado. Until I made these Oatmeal Chocolate Chip Breakfast Cookies and now I look forward to breakfast first thing in the morning!.
Being that the significant other Chad has such a big sweet tooth, I’ve had to think of what he eats in the morning. He loves breakfast. Sometimes Chad is running out the door so early I just hand him a pear or a cupful of grapes and bid him a good day. Other days he is on his own with a bowl of cereal. Sometimes I’ll make something like waffles or eggs.
I was thinking…what if I could make a very healthy and filling breakfast cookie both he and I could take on the go with us? Hmmmm……I came up with these…….Oatmeal Chocolate Chip Breakfast Cookies. Rolled oats, applesauce, nut butter and chocolate chips essentially- all basic staples we all have in our pantry, right?
I found that these usually don’t last until the next morning. Somehow they mysteriously disappear before they can make it into any container for the morning. We basically are eating breakfast at night. Now I hide them and only give them to Chad when he is running out the door.
They are slightly soft but they get a bit more solid as they cool. And the ingredients are fairly interchangeable. You could mash a banana in place of the applesauce. Sub raisins for the chocolate chips. Add nuts. Use peanut butter instead of almond butter.
The best part is these cookies are gluten-free, Vegan (if you use dairy-free chips) and full of protein (thanks to the nut butter and the protein powder) so I consider them to be healthy. Enjoy!
