St. Louis-style pizza is a thing. It’s a thin cracker-like crust pizza cut into squares instead of wedges. However, on our hunt for pizza on a recent trip to St. Louis, we didn’t find a lot of places that serve it St. Louis style. What I did find was perhaps one of the most intriguing pizzas I have ever come across and I made it a must-have during our visit. The Bookmark pizza from Pi Pizzeria.
The Bookmark is a thin-crust pizza with kale, roasted root vegetables (listed on the menu as parsnip, carrots and rutabaga), ricotta, flake salt, and Mike’s Hot Honey. I have had a few people tell me it doesn’t sound too appetizing but I assure you, they’re wrong. It is quite pleasing and delicious! I happen to be a big fan of Mike’s Hot Honey as well- it’s honey infused with chilies.
Most restaurants I have seen use it as an ingredient are in the New York City area so seeing Mike’s Hot Honey at Pi Pizzeria in St. Louis was a special treat. And it was excellent on a pizza with vegetables normally deemed as bitter.
The deep dish pizzas offered here are all made with a cornmeal crust as is the flatbread served with hummus. A perfect choice for a light appetizer before pizza. Don’t forget to save room for the apple pie with a cornmeal crust or the chocolate skillet cake. A full bar is also available to serve your thirst. 5 out of 5 sprouts just for this pizza alone!
