I have tried to make sweet potato chips and I either burn them or they never crisp up. Here is the closest I got to having crispy unburnt chips- basically I had to piece together several recipes I found around the internet.
First, the simple recipe you find on the internet is pretty straight-forward. Slice the potatoes into thin chips, toss with a little olive oil and salt and then bake in a hot oven for anywhere between 20-40 minutes. I have tried this many times and they never get crispy, and from what I read in recipe comments lots of other people don’t get crisp chips either. They taste good enough, they are just still soggy. One thing I found that worked well is to soak the raw potatoes for an hour prior to cooking. Another thing I learned is that adjusting the oven temperature halfway through cooking makes them crispier without burning.
I read to add corn meal or breadcrumbs before cooking. Well, I didn’t see any difference by adding corn meal and the breadcrumbs just burn. I decided to combine a few recipes and a few comments made by readers of those recipes and the chips came out better- here it goes-
