The Food Truck scene has exploded all across the United States with Tampa, Florida being no exception. Certain trucks are so popular and in such demand that the owners see an opportunity for a more permanent bricks and mortar location. Such is the case with the Taco Bus– what started as a small operation serving tacos out of a refurbished school bus is now five stores with a sixth slated to open soon in Sarasota.
We visited the Hillsborough Avenue location in the Old Seminole Heights neighborhood of Tampa. Though it is a permanent location, you still order from a school bus with the kitchen in the back.
First you order your style whether you prefer tacos, burritos, quesadillas, salad etc. Then choose your protein- chicken, steak or pick from a plethora of Vegetarian options from portabellas to vegan “steak strips” to butternut squash.
I was so excited to find a place for an abundance of Vegetarian fare in Tampa, however, one thing I could not pass up was the Shrimp and Oyster Ceviche. Served with a side of fresh tortilla chips, I thought it was absolutely amazing. Lucky for me, Chad isn’t much a shellfish lover so my Ceviche was all mine!
Chad opted for the guacamole– it was tangy, spicy and served with the same tortilla chips as my ceviche.
For entrees, Chad went for the Butternut Squash tacos topped with Pico de Gallo, shredded cabbage and crumbled fresco cheese. Accompanying his tacos was a side of Spanish rice and refried beans.
I ordered the Rajas Con Queso Quesadilla– strips of poblano peppers with corn, salsa ranchera and a Mexican white cheese sauce grilled between two flour tortillas.
On another visit it was all about the tacos. Chad and I normally get the same tacos with the fish tacos being one of our favorites. They crisp the fish up perfectly and dress it with cabbage.
I love the Vegan steak strips taco as well.
And my absolute favorite is the very simple rice and bean tacos. Piled high with all the fixings (sour cream, guacamole and cheese), it doesn’t get more simple or delicious than this gem!
The staff was friendly and helpful- even visiting our table with a few Taco Bus stickers. There is plenty of outdoor seating as well as a small building that houses another kitchen and some indoor tables and booths.
The five locations are all open 7 days a week with the Hillsborough location serving food 24 hours a day from Thursday thru Saturday. An easy 5 out of 5 sprouts.
