Ingredients:Veggie kitchen sink

  • 2 zucchini, diced
  • 3 baby yellow squash, diced
  • 2 carrots, diced
  • 1/2 red onion, diced
  • 2 tbsp minced garlic
  • Olive oil
  • add black beans or firm tofu for extra protein

 

Directions:

Step 1: Heat olive oil (just a few tbsp) over medium-high heat in a large skillet. While skillet is heating, wash and chop the veggies into bite-size pieces and throw into a big bowl. When the skillet is somewhat sizzling, throw all the veggies into the skillet and stir. Continue to sautee about 10-12 minutes …stirring occasionally until veggies are tender and soft.
Step 2: Remove from heat and throw on top of rice or cooked pasta.

 

Note:

There is so excuse to not eat your veggies- this recipe is super easy and versatile. Add chicken, beans or tofu for some protein. You can mix and match any veggies. You can add a marinara or a cream sauce.
