Welcome to What I Ate Wednesday (WIAW)– the NYC and the CIA edition. We just returned from New York City where Chad ran the NYC Marathon. While there, Chad, my Mom and I also took a trip about 2 hours north of the city to visit the Culinary Institute of America. Let’s jump right in-
We started every morning off with fresh fruit. Strawberries, pears, kiwi and bananas.
I found this carrot yogurt at Whole Foods and mixed it with some maple granola. I am not sure the yogurt is meant to be eaten alone as it was fairly sour. However, it would be great on a baked potato or as a veggie dip.
The maple granola added some sweetness to the yogurt.
For lunch we drove up to the Culinary Institute of America in Hyde Park, about two hours north of New York City. We had a goat cheese, avocado and watercress sandwich with a side of truffle fries.
We also split this spinach a fried goat cheese salad. Delicious.
And of course, we had to have dessert. This is the prettiest pumpkin cheesecake I have ever seen!
Dinner was whole wheat pasta with diced tomatoes, onions, black olives, fresh garlic and basil leaves. Colorful!
