5/2 Friday Favorites- Three Vegan things

I am so proud of how Chad and I have evolved our eating into a mostly Vegetarian diet.  While we still eat fish occasionally, we have cut out beef, pork, chicken and other meats from our diet and I truly believe that my skin looks better, I am losing a little weight and I feel better in general.  Every once and a while, we get invited to a restaurant opening and we will try something with meat so I can’t claim to be a true Veggie Head, but in general we actually prepare mostly Vegan food at home.

I thought cutting out meat and dairy would be really hard, but I am surprised at how easy it has become.  Nowadays, there are some great products on the market to make it simple and convenient which brings me to my list of Friday Favorites.  And no longer are Vegetarian products bland and boring.

I used to eat a lot of Morning Star products- but now that is far and few between as they are still highly processed and contain outrageous amounts of sodium and artificial ingredients.  Still better than meat though.  However, we found two healthy and Vegan products that we really love and they both take less than 10 minutes to prepare.  I am not claiming that these are the most healthiest of products, but they are better nutritionally than the more popular Morning Star stuff.

Our most favorite frozen Veggie burger.  This wasn’t the cardboard tasting variety like the Boca brands, this was thick, “meaty”, and hearty.  Turnips, sweet potatoes, beets, coconut oil and turmeric made this a winner winner Veggie dinner!  Not only did they taste great, they didn’t fall apart when bitten into.  They held there own with texture and flavor.  Hilary’s Eat Well also makes a hemp and greens burger we want to try next.

I have written about this before.  We picked it up on a whim at Whole Foods once upon a time and didn’t know what to expect.  After I fixed it, I had to go back and check the package to make sure it was indeed Vegan as we had thought.  Since then we always have a few boxes in the pantry for a quick and delicious meal.  So easy to make, just cook up the mix with a can of tomato paste and some water and in 5 minutes dinner is served.  Fantastic Foods makes other mixes like Falafel and Taco Filling but the Sloppy Joe mix is by far our most favorite.

Of course, we also make our own meals from scratch and I search Pinterest (‹– Here is a link to my Vegan board) for easy and tasty Vegan dishes.  I made this for my Vegan Monday meal this week.  I have never cooked with Spaghetti Squash before (I had to look up a tutorial on YouTube on how to cut it open without removing some limbs) but it turned out to be so easy.  I had found the concept of this sandwich while dining out in Charleston and I knew it was just a matter of time before I would recreate it at home.  I never thought I could eat BBQ again once I gave up meat but now I know better.  Here is the recap of my Vegan Monday post with the easiest recipe for the Pulled Squash sandwich.

I have had fun trying to find Vegan recipes for us and for the Monday posts but it has been so much easier than I had ever thought.  I just joined an online community for so I am excited to keep sharing this Vegan food movement with everyone.

Seasons 52 desserts

However, not all this week was healthy and Vegan.  I was invited to Seasons 52 to try their new dessert menu and I had all nine of their desserts.  I couldn’t finish any of them but just a few bites of each one left me on a big sugar high that lasted the rest of the day!  It was worth it though……Seasons 52 has some amazing new desserts they just rolled out this week.

That is all great :-) There is now a different brand of meatless “meat” call Beyond Meat as an alternative to Gardein brands. Whole Foods doesn’t have it (yet) but I found it at Westerly Market on 8th Avenue and 55th Street in New York. It’s good.
