6/13 Friday Favorites- Food This Week

Ah….Friday the 13th…….why is it that Friday the 13th is supposed to be a bad day?

It’s been a fairly quiet week around Beets land.  Chad and I have been on a roasted veggie binge.  Every night for dinner we have been roasting cauliflower, broccoli and brussel sprouts and adding them to rice or pasta.  All this healthy eating is leading up to our June 5k race- the Run for Pies event in Jacksonville.  I plan on eating a lot of pie!

So as usual, it’s time for Friday Favorites….and as usual, it’s revolving around what I ate this week.

1. Sea Salt Caramel Pasta

We found this at the Winter Park Farmer’s Market and decided to give it a shot.  I served it with roasted broccoli, brussel sprouts and tomatoes.  There was no distinctive caramel or sea salt taste but we love fresh pasta so it was still a hit.

2. Garlic Parmesan Rosemary Fries

Ya, so much for my month of no cheese I vowed to for June.  While at the Winter Park Farmer’s Market, Chad and I split an order of these delectable fries from The Fry Bar booth.  Lots of parmesan cheese and rosemary topped these golden and crispy potatoes.  I especially loved the roasted garlic served on the side.  I absolutely adore roasted garlic.

I love roasted garlic so much that I used it as a topping for crostinis to go alongside our caramel pasta.  So much better than garlic salt on toast right?

4. My Overboard Salad

I may have gone  little overboard on the salad toppers- I added pine nuts, sunflower seeds, hemp seed, wheat germ, nutritional yeast, chia seeds and flax seed to a bowl of arugula and some tomatoes.  At least it was super healthy, right?

I came home with bags of this stuff when I was in Miami.  This stuff is kind of addicting, even for someone like me who isn’t a big fan of chocolate.   Salted caramel and toffee crunch are my favorites though this mint chocolate chip is a close second.  It’s like eating all the end pieces of a pan of brownies.  Even the kids in my house love this stuff.

Sea Salt Caramel Pasta? Very interesting!

My husband and I are going out to dinner for date night tonight, we're trying Peruvian food for the first time. I'm excited!
