It’s summertime finally. I know some of you have endured a long hard winter so I sure hope everyone is happy now!
I don’t know about you but in the summer I tend to eat a little less. The food tends to be a little lighter in my house. We eat a lot of sandwiches and salads. Which brings me to this list of my favorite sandwiches for the summer:
1. BBQ Pulled Squash
I have talked about this sandwich many times on the blog- it is just that darn tasty. This is a perfect Vegan sandwich for the summer- Farmer’s Markets have spaghetti squash in abundance. The squash is lightly dressed in a BBQ sauce and summer is THE season for all things BBQ.
2. Beet Burgers
These Beet Burgers are perfect for the summer- no heat needed for these. Raw beets with white miso pasta anchor these tasty treats.
3. Chickpea Avocado Mash
Another no heat recipe for summer and only three ingredients. Super easy.
4. Grilled Cucumber Hummus Sandwiches
I posted these on the blog not too long ago and they have been a big hit. There’s no missing the cheese here as the hummus is creamy and tangy. This isn’t reinventing the wheel. It’s just cucumbers, hummus and black olives. Grilled.
5. Vegetarian Sloppy Joes
I rave about this stuff. It’s cheating, it’s in a box. I can only find in very select stores- it is perhaps the one thing I can find at Whole Foods in Orlando that I can’t find at Whole Foods in New York City. It’s unbelievable. So easy and delicious. And nobody will know it’s Vegan or Vegetarian unless you tell them. I promise. The mix is made by Fantastic World Foods.
