Ingredients

For the pasta:

  • 8 oz spaghetti
  • 1 (3.75–4 oz) tin sardines in olive oil
  • 2 tablespoon olive oil (use some from the sardine tin)
  • 3 cloves garlic, thinly sliced
  • 1 teaspoon red pepper flakes (optional)
  • 2 tablespoon capers, drained
  • Zest and juice of 1 lemon
  • ¼ cup parsley, chopped
  • Salt and black pepper

For the toasted breadcrumbs:

  • ½ cup panko or fresh breadcrumbs
  • 1 tablespoon olive oil
  • Pinch of salt
  • 1 small garlic clove, grated (optional)

Instructions

1. Toast the Breadcrumbs

  • Heat 1 tablespoon olive oil in a small pan over medium.
  • Add breadcrumbs and a pinch of salt. Stir frequently until golden and crisp, 3–4 minutes.
  • Optional: stir in grated garlic during the last 30 seconds.
  • Transfer to a bowl so they stay crunchy.

2. Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Cook spaghetti to al dente. Reserve 1 cup of pasta water before draining.

3. Build the Sauce

  • In a wide skillet, heat 2 tablespoons olive oil (including some from the sardine tin).
  • Add sliced garlic and red pepper flakes; cook until just fragrant.
  • Add capers and sauté 1 minute.
  • Add the sardines, breaking them gently into large flakes.
  • Add lemon zest and juice.
  • Stir in ½ cup pasta water to loosen.

4. Combine

  • Add cooked pasta directly to the pan.
  • Toss until glossy, adding more pasta water as needed.
  • Stir in parsley and adjust seasoning with salt, pepper, or extra lemon.

5. Serve

  • Pile into bowls and shower generously with toasted breadcrumbs for crunch.
