Chocolate Beet Brownies

Inspired by a Love Beets brand beets recipe

  • 7 oz. dark chocolate bar, at least 80% cocoa or 7 squares
  • 4 tbsp butter, 1/4 cup, melted
  • 1 14.5 oz. can beets, about 1 3/4 cups
  • 3 eggs
  • 1 cup coconut sugar, or light brown sugar
  • 2 tbsp cocoa powder
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp chili powder
  • cooking oil spray


  1. Preheat oven to 400° Spray a 13x9 baking pan with cooking oil spray. 

  2. Chop the chocolate into smaller pieces, add to a glass measuring cup and melt in the microwave in 10 second increments. 
  3. Add the beets to the bowl of a food processor and puree until fairly smooth. 
  4. Add the melted chocolate, butter, vanilla and eggs and blend. 
  5. Add the sugar, cocoa powder, baking powder and chili powder and bland until the batter is smooth. 
  6. Pour the batter into the baking pan and bake 30-35 minutes. 
  7. The brownies should begin to pull away from the side of the pan a bit.  

  8. Allow brownies to cool before cutting. The brownies will be sticky so be sure to wipe your knife between cuts.
