Maple, Blueberry & Oatmeal Energy Bites

Ingredients

  • 3/4 cup almond butter
  • 3/4 cup sweetened coconut flakes
  • 1/2 cup dry old-fashioned oats
  • 1/4 cup pure maple syrup
  • 1 tsp pure vanilla extract
  • 1 cup fresh blueberries

Instructions

  1. Mix all the ingredients together in a large mixing bowl, careful not to smush the blueberries too much. Cover bowl with plastic wrap and keep in the fridge for about 30 minutes.
  2. Roll the chilled dough into bite-sized balls.
  3. Store in an airtight container in the fridge. They will keep up to a week.
