Brussels Sprouts in Fish Sauce Dressing

Inspired by a recipe from Eating Well magazine, these Brussels Sprouts are not only delicious, salty, and sweet, but healthy too!

  • 1 lb. fresh Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • 3 tablespoons fish sauce
  • 2 tablespoons lime juice, the juice of 1-2 limes
  • 2 teaspoons brown sugar
  • 2 cloves garlic, peeled and minced
  • 1 tablespoon + 1 teaspoon red pepper flakes
  • 2 tablspoons fresh mint chopped


  1. Preheat oven to 450°.
  2. Line a baking sheet with parchment paper.
  3. In a bowl, combine the Brussels sprouts with the olive oil, Toss to coat the sprouts.
  4. Pour the Brussels Sprouts into a single layer on the lined baking sheet.
  5. Roast the sprouts about 15 minutes, stirring half way through.
  6. As the sprouts roast, add the fish sauce, lime juice, brown sugar, garlic, and red pepper flakes to a large bowl and whisk.
  7. Remove the Brussels sprouts from the oven and add to the bowl with the fish sauce dressing.
  8. Toss to coat.
  9. Sprinkle the chopped fresh mint over the sprouts and serve immediately.
