Spinach, Egg, and Feta Toast
Easy peasy. 5 minutes to a healthy and hearty breakfast. Print
- 1 tbsp. olive oil
- 2 cups fresh spinach
- sea salt
- 2 slices bread of your choice
- 2 eggs
- 1/4 cup crumbled feta
Heat the olive oil in a pan over medium heat.
Add the spinach and allow to sit for about two minutes. (Add salt if desired)
As the spinach is "resting" poach the eggs**.
Add bread to the toaster and toast as desired.
Move the psinach around the pan until the spinach becomes wilted.
Build the toast:
Top the toasted bread with the wilted spinach, followed by the poached egg.
Sprinkle with the feta cheese and black pepper.
