Cucumber Mint Tonic
Inspired by a recipe from Health magazine.

Cook Time 30 minutes
Total Time 35 minutes
- 1 medium cucumber, peeled and chopped (yield 1 1/2 cups)
- 1/8 cup loosley packed fresh mint leaves
- 4 cups filtered water
Add all ingredients to a blender.
Pulse until smooth.
Place blender cup in the fridge for 30 minutes.
Using a fine mesh strainer, drain the liquid over a bowl.
Pour the liquid into a vessel to keep in the fridge. Tonic will store up to a week in the fridge.
