Cucumber Mint Tonic

Inspired by a recipe from Health magazine.

  • 1 medium cucumber, peeled and chopped (yield 1 1/2 cups)
  • 1/8 cup loosley packed fresh mint leaves
  • 4 cups filtered water


  1. Add all ingredients to a blender.
  2. Pulse until smooth.
  3. Place blender cup in the fridge for 30 minutes.
  4. Using a fine mesh strainer, drain the liquid over a bowl.
  5. Pour the liquid into a vessel to keep in the fridge. Tonic will store up to a week in the fridge.
