Brussels Sprouts Burgers

They won't know these burgers are made with Brussels sprouts if you don't tell them.


  • 16 oz. Brussels sprouts, trimmed
  • 1 cup grated parmesan cheese
  • 1/4 cup almond flour **
  • 3 tablespoons green onion, chopped, green parts only
  • 2 eggs
  • 1 cup goat cheese
  • 1 tablespoon olive oil

For the Cheesy Mayo Buns (optional):

  • 1/2 cup shredded cheddar cheese
  • 1/3 cup non fat or Vegan mayonnaise
  • 1/2 teaspoon onion powder
  • 4 burger buns


  1. Using the shredder attachment on the food processor, shred the Brussels sprouts.
  2. Transfer the shredded sprouts to a large mixing bowl.
  3. Mix in the grated parmesan cheese and almond flour to the Brussels sprouts and combine.
  4. Add the green onion, goat cheese, and eggs. Use hands to mix well.
  5. Heat the oil in a pan over medium high heat.
  6. Form the Brussels sprouts mixture into four patties.
  7. Cook burgers on each side for 3 minutes.
  8. Remove from pan and let "rest" on a paper towel lined plate for 30 seconds.

To make the optional cheesy Mayo Buns:

  1. Preheat oven to 350°
  2. Combine the cheese, mayo, and onion powder in a bowl.
  3. Divide the mayo mixture among 4 hamburger buns.
  4. Bake in the oven for 10 minutes.
  5. Top with the Brussels sprouts burgers and enjoy.

Recipe Notes

**While I prefer to use almond flour, you can use white, rice, or any other nut flour of your choosing.
