I am not a big fan of breakfast. Usually I am satisfied with a protein smoothie as I am getting ready to start my day. Then the weekend comes and I have more leisure time to enjoy brunch out with friends, which usually consists of a plate filled with eggs Benedict and fresh fruit.
Then there are the days when I don’t have to rush around first thing in the morning but I don’t have hours to spend out on the town gossiping with the girls. That’s when something like a delicious chocolate chip scones and a frothy cup of coffee comes into mind.
Chocolate chip scones are simple to make and easy to enjoy as a dish on its own or as a tasty addition to a more elaborate spread for a hosted brunch. And scones are as versatile as a chocolate chip cookie with add-ins. Dried fruit, chopped nuts, or even peanut butter chips are great additions.
I cheat a bit with these chocolate chip scones with the use of boxed yellow cake mix. It saves me oodles of time spent measuring and mixing more ingredients as I like to keep things simple when it comes to my mornings. Seven ingredients is all you need, and two of those ingredients are salt and water!
I also like to save myself the headache of a messy cleanup by sliding a large piece of wax paper or a rubbery cutting board under my cooling rack. I’m not about wasting time scrubbing sticky sugar icing off my kitchen counters. Sometimes I will decorate my scones with colorful sugary ice cream sprinkles too, so the wax paper is even more useful during clean up.
However you choose to make a mess or top your scones, these will be a wonderful way to start the day!

Chocolate Chip Scones
Chocolate Chip Scones with only 5 ingredients are easy and delicious for a quick breakfast or as an accompaniment for Sunday brunch.
Ingredients
- 1 1/4 cups yellow cake mix
- 1 cup + 2 tablespoons flour, divided
- 1/2 teaspoon salt
- 8 tablespoons cold butter, cut into 1/2 inch slices
- 1 cup milk chocolate chips
- 1/3 cup + 1 tablespoon cold water, divided
- 3/4 cup confectioners' sugar
Instructions
- Preheat oven to 400° F. Line a large baking sheet with parchment paper.
- In a large mixing bowl, whisk together the cake mix, 1 cup flour, and salt.
- Add the butter and combine. (I find it best to use clean hands here to really incorporate the butter.)
- Add the chocolate chips and stir to combine.
- Add 1/3 cup water and mix (also best to use hands) until the mixture has a texture of a cookie dough.
- Add the remaining flour to a large clean cutting board or work surface. Add the dough mixture to the cutting board and pat into a 6x6 inch square (about 1 inch thick).
- Using a dough cutter (or a sharp knife dipped in water), cut dough into 4 equal-sized triangles.
- Carefully place each triangle onto the prepared baking sheet at least 2 inches apart (scones will expand as they bake).
- Bake scones 17-20 minutes, until a toothpick inserted into the middle of a scone comes out clean.
- As the scones are baking, set a large piece of wax paper under a wire cooling rack.
- In a small mixing bowl, whisk together the confectioners' sugar and 1 tablespoon water.
- Remove the scones from the oven and carefully transfer each to the the wire cooling rack.
- Allow the scones to cool 5-10 minutes then drizzle with the sugar icing.
